It’s often said that rum, a spirit distilled from fermented molasses or sugarcane juice, was first invented in Barbados. There are dark, aged rums, which are a favourite of connoisseurs; there are white, almost flavourless rums, used for mixed drinks by bartenders.

And then there are flavoured rums, which are boosted with spices and flavours, like bananas and mangoes.

Rum, the chameleon of spirits, can be the key ingredient in an ice-filled refresher or enjoyed straight, simply poured into a snifter. But rum-based cocktails are the ultimate elixir for aficionados.

White rum may be the first choice of many today, but who amongst us can resist a pungent, full-bodied, dark rum? It almost seems like the flavour of the season in winters!

Owing to its balanced taste, white rum is the base of many refreshing drinks — right from the mojito to the daiquiri, mai tai to pina colada. Served in a martini glass, a white rum cocktail with Bacardi, lime juice and honey can be light, and yet offer complex flavours.

White rum when paired with sugar syrup, angostura bitters and chilled water makes for a flavourful cocktail, strong yet not overly powerful. It is an ideal one for first-time drinkers or those keen to experiment.

Interestingly, when light rum and dark rum is combined, it results in exciting cocktails too. Of course, the mixture needs sugarcane juice and egg whites added to it. And yes, one must be ready for the heady, potent poison of this kind.

Rum and tonic, which features Crystal Rum with tonic water, a slice of lime and a sprig of mint served in a tall, cool glass of ice, never fails. Thanks to its versatility, rum can be enjoyed in many cocktails. Typically, however, cocktails call for dark rum.

Dark rum, kahlua liqueur and cream make for an intense-flavoured drink, ideal for a cold day. Mai tai is one of the better known Tiki cocktails, with a shot of dark rum, a small shot each of orange curacao and apricot brandy, lime juice, orgeat syrup and sugar syrup. Place one half of the lime husk in a chilled old-fashioned glass, and top up with crushed ice. Shake and strain the drink into the glass, and garnish with a sprig of mint. Voila! One can have a classic cocktail ready in minutes.

Any bartender will tell you that aged and mature rum is the perfect one for a cocktail. When added, this kind of rum ensures a depth and flavour that is unparalleled. Many, especially in this season, also favour spiced rum.

A hint of spiced rum along with some fruit based liqueurs, like a pear, sugar syrup and fresh lime juice served in an old-fashioned glass can be the highlight at a party.
Light, white, aged, dark or spiced — make use of any rum that appeases your palate.
